Snack Sized Dinner

 
Wonton Chicken Tacos
 
 
 
I love super easy, super delicious meals. Today was a perfect day for one of those meals. Having two boys 17 months apart in my house; some days have more challenges than others. Amazingly today was one of the less challenging days. The boys slept in, woke up in great moods, no one cried all day,  and i didn't get pooped on.....Today was an awesome day! I was so glad that i had decided to make these today because they were so effortless and i didn't have to spend all day cooking. I threw the chicken in the crockpot this morning and was able to enjoy my peaceful house for one day....which im positive will go back to normal chaos tomorrow. When it was dinner time it took me 15 minutes to put them together and cook them. The best thing about these it that this recipe is SOOO versatile. You can fill them with beef, pork, pizza ingredients, chocolate,jelly, potatoes....heck you could put pickles in them for all i care. the point is you can come up with so many awesome things to fill these awesome little triangles :) So go ahead try my recipe, then get crazy and make them your way!
 
 
 

 
 
 
 
 
 

 
 
 

 
Wonton Tacos

Ingredients:

3 Chicken breasts
1 can of rotel
3/4 package of cream cheese
1 cup of water
1 tbsp salt
1 tsp pepper
taco seasoning ( i make my own, its basically cumin,chili powder,onion powder,garlic powder, cayenne, and a tiny bit of habenero powder)
1/2 package of wonton wrappers
oil to fry in ( you can also bake them)




Directions:

1. in the morning toss in the chicken, seasonings,rotel, cream cheese,and water into your crockpot put it on low for 6-8 hours

2. once your chicken is done, shred the chicken. ** Fun fact. did you know the easiest way to shred chicken is to use your hand mixer? perfectly shredded chicken every time**

3. Heat your oil on medium heat

4. fill each wonton wrapper with 1/2 tbsp of chicken mix. wet the edges of the wrapper, fold into a triangle and set aside

5. once all of your triangles are done and your oil is ready place 4-5 wontons in the oil ( i have a very large Wok i fry in, but if you cant fit that many its ok)
they only take about a minute per side. once they are golden on both sides take out and place on paper towel

6. Serve with salsa, sour cream, and some guac :)


*******You can also bake them at 350 for 10 min or until golden, make sure to coat in egg wash******
