Protein Packed Oatmeal pancakes



Military man has been working out significantly more, and along with working out you need to fuel the body with the proper nutrients to keep you going. I wanted to find a make ahead breakfast that he could pop in the microwave or take to work and eat before, and after working out. It also needed to be something the rest of the family would enjoy, nothing goes to waste in our house, and im definitely not a line cook...making everything cooked to order.  
We had talked about making pancakes with protein mix, they come in such a variety of flavors but as a pancake lover i couldn't figure out how to substitute all the delicious carbs in them... i took a spin at the eggs and banana cupcakes once..just once because they were terrible! they lacked that fluffiness that i liked in pancakes.

 After a little pondering and searching i put together a few different recipes and came up with these Protein Packed Oatmeal Pancakes, the texture is a little different. More sturdy than regular pancakes but they tasted great, next time i will cut up some fresh strawberries and add some chocolate hazelnut sauce but grocery day is in a couple days and i didnt want to run to the store when it was 45 degrees out!


You will need,

  • 1 cups. oat flour 
  • 2 tsp baking powder
  • 3 tbsp cocoa powder
  • 2 scoops chocolate protein powder
  • 4 tbsp granulated sweetener
  • pinch of salt
  • 2 egg
  • 2 milk
  • 1 tsp vanilla extract
Mix the first five ingredients together in a medium size mixing bowl.  




In a separate container, whisk the egg, milk and vanilla together.  
Add the wet ingredients to the dry mixture and blend together.  





Bake pancake batter in three small batches on a non-stick skillet at medium heat, i used a little coconut oil. approx 1-2 min. on each side. 

 Serve with a simple coconut oil, honey, and cocoa powder syrup or i would recommend spreading  nutella on it!
