Open Faced Burger and Sweet Potatoes




Oh yes...and its just as good as it looks!! This meal was triple star approved by all three of the men in my house. It was simple, delicious, and left me craving new ways to make this meal!

I hope you enjoy it as much as we did!

The first thing you want to do is peel and slice up your sweet potatoes, they take the longest so you'll want to do everything else while those bad boys cook up!

Once your sweet potatoes are cut up into nice bite size wedges, preheat your oven to 375. Toss the potatoes in olive oil, a tablespoon of honey, salt, and pepper. let them hang out in the oven for an hour.

While those are cooking you can make your sauce. This sauce was so simple and perfect for the dish. its so easy you may not even believe it. One single serving plain greek yogurt, one tablespoon of honey, 1/2 tablespoon raw sugar, dash of cinnamon  stir and refrigerate!


Ok now that's all doing its thing, time for the meat.



you will need, 

-2lbs lean ground beef( the lean part is important)
-4 thick cut strips of bacon
-2 eggs
-salt
-pepper
-onion powder
-garlic powder
-hot sauce.

Throw the strips of uncooked bacon in a food processor until a super fine crumble.

in a bowl, mix eggs, beef, bacon, and seasonings to your liking... i would say i probably used a tablespoon of each. mix with your hand until just blended. form into patties.

I used my George foreman but you can definitely toss them on the grill. 

now the fries are baking away, your meat is ready to cook if not cooking already.

Lastly i caramelized some onions, with a little olive oil until nice and brown.


Then its plating time, put your juicy patty on a bed of lettuce, top with onions(i sliced avocado on top also), and a squirt of lemon juice. load up on sweet potatoes and drizzle your yogurt sauce.... DE-lish!
