The Best Turkey You Will Ever Eat...Ever.

I made my first Thanksgiving turkey when I was 17, and it took me three years to perfect the most amazing..moist..fall off the bone, oven baked turkey. Ever. 

Lucky you guys...Ive decided to share my recipe in detail. 

I promise if you make your turkey this way everyone will be pleased!


 Squeeze the juice of two oranges
 Add 2 sticks of butter, salt, 2 cloves of garlic, oregano, pepper, and juice to food processor

Spoon into a bowl and set aside
 separate skin from flesh

  Make 2 in patties with the butter mixture
 push butter under skin in all big pockets


 Smoosh the butter on the outside and rub the turkey down
 Cut a whole onion in quarters and stuff garlic in the middle
 Push inside turkey cavity
 Slice top of orange off and stuff in also



Pull out your handy dandy Sazon
 Rub er down
 Add Salt, and pepper
 keep rubbing.

Foil and refrigerate.

Roasted Pork, with Creamy Buttercup Hash

MMMM juicy, moist pork loin. yumm.
most people say goat cheese isnt paleo, and it probably isnt. but i love sharp,creamy, goat cheese. so i used it, you can easily leave it out or use just coconut oil. Also i used my rotisserie for the sake of time but it will work just fine in the oven.

For the Pork you will need:
one pork loin
1/2 goat cheese
1 cup of spinach
2 cloves of garlic
salt and pepper
rosemary

you can stuff your loin one of two ways, you can butterfly it open and roll it back up, or you can with a very sharp knife make a hole all the way through the middle and stuff it that way. 
you'll want to do that first, i butterflied it because i was putting it in the rotisserie and didnt think it would stay on the prongs the other way.

ok so loin is cut. salt and pepper it. Check.

Now put your garlic, spinach, goat cheese in the blender and pulse it a few times until its a nice paste.

now you will want to stuff your loin
 a nice even coat of your cheese mixture, then just roll it up and tie it closed with some twine

 i tossed it in the rottisserie for 45 minutes, in the oven 350 for an hour

im slacking on the pictures, i know... but at least i dont forget them all together :)

for the hash you will need:
one BUTTERCUP squash
one apple
1/2 an onion
olive oil
honey
salt and pepper

Peel and cube your squash, dice your apple and onion.
in a well oiled skillet add all your ingredients and sautee until squash is tender, the squash will start to cook down and make it a creamy delicious mess. ha  

and thats it, slice your loin and enjoy!






Crusted Salmon, with Mango Salsa


I love the combination of fish and fruit, I particularly love seafood in general. For those who dont, this is a good way to disguise the fishyness. Sorry for the lack of pictures, i threw this together in 20 minutes after getting home late! which proves there are no excuses for not eating right! :)

You will need:
Salmon steak per person, i had 2 lbs of salmon
Almond flour to coat
salt
pepper
juice of one lemon
parsley
garlic


Lay out your salmon steaks in a shallow dish, salt and pepper them on both sides. pour lemon juice and grate a clove or two of garlic. 

let sit while you prep your salsa.
for the salsa you will need:
one mango
3 strawberries
1 lime
cilantro

Peel and slice your mango, cut strawberries into small chunks, toss with the juice of your lime, and add a sprig of cilantro.

Now pour some almond flour in a plate, and dredge your salmon and place in a skillet with generous amounts of olive oil. on medium heat.
when the salmon is a light flesh color and flakes with your fork its done!

i served mine on a bed of spinach, but you can definitely do any veggie sides. scoop a big helping of mango salsa on there and enjoy!!

Paleo: Buffalo Chicken Bites and Creamy Avocado Dip

seriously people... this was way better than even i imagined it would be. This is one of those so good even people who dont eat healthy would love kind of meal!!

Everything came out so perfect the crust stayed on great it was crispy and tasty. I've had other peoples attempts at paleo "fried" chicken and i vividly recall it being tasteless, mushy and the breading fell right off. This recipe blew my non paleo chicken out of the water!

You will need:

CHICKEN
Chicken tenderloins, i used 6
almond meal/flour
salt 
pepper
garlic powder  
paprika
2 eggs

BUFFALO SAUCE
1 stick high quality butter, we use kerrigold irish butter
1/2 hot sauce
1 grated garlic clove

AVOCADO SAUCE
one avocado
half a handful of cilantro
half a lime
2 tbsp coconut oil


 On low heat melt your butter
 add your grated garlic and let sit hit for five minutes on low
 add your hot sauce, shake it up and set aside.



 Chop your chicken into one inch pieces
Scramble two eggs and pour into the chicken. set aside


combine all avocado sauce ingredients in the blender and blend until the nice and creamy
The heat from the blender blades will make the oil separate but you can put it in the fridge and then mix it and it wont be separated anymore.


dredge your chicken in the almond meal with your seasonings in it



in a well oiled shallow pan, heat the oil to medium heat and cook until brown and crispy


cool your chicken on a rack NOT a paper towel. To get the best crispy chicken or anything... place a towel under a cookie rack and put your chicken on the rack.


i served it with some sliced carrots, because i dont like raw celery :)

A little planning goes a long way

I find peace in making lists...or i may just be compulsive? we shop twice a month or groceries. thats it... unless something happens to slip my master list and i forget an item. 
one shopping trip for two weeks worth of meals and snacks... thats a little overwhelming at first. but i have perfected my list making and even if it takes me 3 hours to get our shopping list, meal plan, ingredient list and menu together... its worth it to know exactly what we are eating and no meals are being skipped. 
once the grocery shopping is done i split the protein and veggies, and most importantly SNACKS. If the snacks are not separated they will be gone in one day. so i make sure they last both weeks since i also send military man with a packed lunch :) dont let him lie to you...he loves it! Ha

this is probably more information than you care to even know but im going to show you all my lists today, my shopping list, my meals and my ingredients!! as well as how i prep some of the stuff for the week... brace yourself... 

Normally my first list is a list of what is on sale that i like.. from that list i make my meal list. after i make my meal list..i make my ingredient list. lastly my final shopping list... wheeew are you tired yet? im going to skip the sale list because its pretty close to the actual shopping list this time!!
